Then you’ll love this tahini sauce recipe – it’s fantastic with salads, grilled veggies, wraps, toast, and fish.

Tahini entered my life as a smoothie bowl ingredient and a breakfast bowl topping, until one day my friend Hannah taught me about making a traditional savory Middle Eastern tahini sauce. That’s when I learned that tahini is not a finished product, but an ingredient for the most deliciously creamy dip and sauce.

Since getting a house in the country and starting my own garden, I’ve been grocery shopping less than usual. I aspire to grow and forage most of my own food – but for now, it’s not yet a reality.

When I shop, I buy organic produce when possible. I was so happy to discover that our local Walmart (which was a life-saver during our move when we got stuck in the rain as it was the only store open!) carries locally grown, fresh, organic produce.

I recently went to Walmart’s Rediscovering America kick-off event, where we celebrated locally grown produce available at Walmart and the 9 celebrated chefs that will feature Walmart’s affordable, fresh, fruits and vegetables in a dish on their menus for a limited time.

That night, the award-winning chef Joseph Johnson, aka “chef JJ” took fresh vegetables to the next level.

Inspired by the imprint of the African diaspora (and other diasporas) around the world, Chef JJ’s creations included cauliflower curry with coconut sticky rice patties (so chewy!), perfectly spiced shishito peppers and watermelon cucumber salad with West African peanut sauce. 

Chef JJ’s spiced broccoli with avocado pistou was better than any broccoli I’ve ever had and inspired me to fire up the grill and step up my tahini recipe.

The Best Tahini Sauce Recipe

Ingredients:

  • 1/2 cup tahini
  • 5 Tablespoons lemon juice
  • 2 garlic cloves
  • 1/4 cup extra virgin olive oil
  • 1/3 teaspoon sea salt
  • Freshly ground black pepper to taste
  • Approximately 1/4-1/2 cup filtered water

Directions:

1. Chop garlic finely.

2. Place lemon juice in a small bowl, and add garlic to it. Let soak for 10 minutes to infuse lemon juice with garlic (a fantastic trick adapted from Cookie & Kate.)

3. Place tahini, garlic-infused lemon juice, olive oil, sea salt, and black pepper into a bowl. Use a fork to whisk it. 

4. As the mixture thickens, add filtered water, one tablespoon at a time, and continue whisking until you get a creamy consistency.

5. Serve with fresh or grilled vegetables, on top of a salad, or toast!

1. Preheat the grill.

2. Trim broccoli by taking off the bottom half of the stem, and breaking it up into small trees.

3. Toss broccoli in a bowl with avocado oil or olive oil.

4. Place a sheet of foil on the grill, and add broccoli on top.

5. Grill for about 10 minutes, tossing as needed.
