Sunflower seeds are a great source of vitamin E, magnesium, and selenium. They have a mild, nutty flavor and are also rich in healthy fats and antioxidants. Use Lizzie’s recipe in your next morning smoothie or oatmeal for a fruity and nutritious twist.

Strawberry Sunflower Seed Milk

INGREDIENTS:

  • ½ cup sunflower seeds
  • 2 cups filtered water
  • ⅔ cups strawberries (fresh or frozen)
  • Pinch of cardamom
  • Pinch of salt
  • ½ tspn vanilla
  • 3 tspn sweetener of choice (raw honey, maple, coconut nectar, monk fruit, etc.)

DIRECTIONS:

  1. Soak the sunflower seeds in filtered water overnight.
  2. Drain and rise.
  3. Add sunflower seeds with water to the blender. Blend on high for two minutes.
  4. Strain the liquid through a nut milk bag or cheesecloth. Save and set aside the milk pulp.
  5. Once strained, add the liquid back into the blender with the rest of the ingredients.
  6. Blend for 30 seconds or until smooth. Sweeten to taste if desired.
  7. Yields about 2 cups of milk.
