Tropical Chia Parfait Recipe

- ¼ cup chia seeds
- 1½ cups almond milk
- ½ cup coconut yogurt
- 1 scoop collagen (We love Vital Proteins)
- ¼ cup frozen dragon fruit
- Smoothie topper (optional):
- ½ cup frozen dragon fruit
- ½ frozen banana
- ¼ cup coconut yogurt
- ¼ cup almond milk
- Soak chia seeds in 1 cup almond milk for at least 2 hours, stirring occasionally until well absorbed. Add more almond milk if needed.
- Blend dragon fruit with ½ cup almond milk until smooth and liquid.
- Separate chia pudding into 2 bowls.
- Stir in coconut yogurt.
- Add half of the dragon fruit mixture to each bowl.
- Add more coconut yogurt to one bowl to achieve a lighter color.
- Blend smoothie topper (optional).
- Layer into a glass, top with smoothie topper and coconut shreds, and enjoy!
