Vegan Vanilla Chai Superfood Smoothie Bowl with Sweet potato | Breakfast Criminals

While banana is a the usual suspect when it comes to smoothie bowls, there is another ingredient I’ve been using to make my smoothie bowls sweet, creamy, thick and satisfying. Sweet potato! A nutritional powerhouse, sweet potato a rich source of calcium, potassium (more than bananas), vitamins A and C, copper (which assists in production of collagen for beautiful skin) and dietary fiber.

I’ve been baking a batch of sweet potatoes on Sunday nights, and then chopping them into my salads, blending in smoothies, and mashing into oatmeals the whole week.

This Vanilla Chai Smoothie bowl with sweet potato and Vanilla Chai Love Organic Smoothies Blend (simply a mix of superfoods like mesquite and lucuma with spices like nutmeg and cinnamon) from my Aussie friend Whole Food Nutritionista is heavenly, filling, and super easy to make.

Ingredients to Blend:

  • 1 cup nut milk of choice (I used fresh made cashew milk: simply soak 1 cup cashews in water for 4 hours to overnight, rinse with water, then blend with 5 cups filtered water and a date to sweeten if you like)
  • 1/2 baked and peeled sweet potato (about fist-size)
  • 1 frozen banana
  • 1 heaping tablespoon Whole Food Nutritionista Vanilla Chai Superfood Smoothie Mix or 1 serving of vanilla protein of your choice
  • 1 inch peeled ginger

Get creative! I used chopped figs, dried apricot, coconut chips, kumquat, Gigi’s remix raw sprouted crunchy granola, raw almond butter.
