Raw Buckwheat Porridge Recipe with Arctic Berries Blackcurrant Powder

One of my favorite recent discoveries that’s become a staple in buckwheat porridge is raw dried berries that come in powdered form. A super convenient solution for winter, when berries are out of season. One teaspoon of raw dried berry powder is equal to a handful of fresh berries, and because of gentle freezing is loaded with vitamins, antioxidants and nutrients.

I’m loving Arctic Power Berries brand and their Blackcurrant, Blueberry and Sea Buckthorn powders. Think fresh picked wild Finnish berries with no additives whatsoever.

Raw Buckwheat Porridge Recipe

(makes 2-3 servings)

Ingredients: 

Toppings (get creative!)

Chopped mango, raspberries, coconut shreds, toasted buckwheat, and another sprinkle of Blackcurrant Powder.

Directions: 

  1. Place the buckwheat groats into a mason jar and cover with filtered water.
  2. Soak for 1 hour to overnight.
  3. Drain and rinse the groats well in a strainer.
  4. Blend groats with the rest of the ingredients until creamy.
  5. Add toppings.
  6. Enjoy with love!
