I’ve been obsessed with zoats – a combination of shredded zucchini and oats, and this chocolate zoats recipe is my go-to!

Zoats make an incredibly satisfying and nutrient-packed breakfast. Simply add grated zucchini to oats and cook them as you normally would, or take it to a whole new level with these creamy and incredibly satisfying chocolate pumpkin zoats.

Vegetables have never tasted so good – you can’t even make them out in this creamy chocolate pudding of a meal! 

Chocolate Zoats Recipe

This recipe is inspired by Nutrition Stripped’s Mexican Chocolate Zoats recipe,

Ingredients

  • 1 small zucchini
  • 1 cup almond milk (buy it or make DIY almond milk) or oat milk (or DIY oat milk)
  • 1/2 cup oats
  • 1/2 cup pumpkin puree (or 1/2 cup baked pumpkin, chopped in cubes)
  • 2 tbsp. raw cacao powder or Philosophie Cacao Magic
  • 2 tbsp. sweetener of your choice – I recommend brown rice syrup or raw honey
  • 1 tspn. pumpkin pie spice
  • 1 tspn. maca powder  – optional superfood boost for energy and hormone health

Ingredients for Toppings:

Pomegranate seeds, pumpkin seeds and banana. Use what you have!

Directions: 

1. Blend peeled zucchini and almond milk.
2. Mix oats with zucchini and almond milk mixture and cook in a small pot until the liquid is absorbed and the oats expand, about 10 minutes.
3. Add pumpkin puree, stir well, cook a few more minutes.
4. Add raw cacao, stir.
5. Turn off the heat, add sweetener of your choice, and serve with love with toppings of your choice.
